Sufganiyot

Ingredients

  • 1 cup warm water
  • 1T yeast
  • 3c flour
  • 1/4c confectionary sugar
  • 3/4t salt
  • 1/2t nutmeg
  • 2 egg yolks
  • 2T vegetable oil
  • 2q oil for frying
  • 1t vanilla
  • jam, cinnamon and sugar, etc, to taste

Instructions

  1. Proof yeast in water
  2. Combine flour, sugar, salt, nutmeg.
  3. Add egg yolk, 2T oil, and vanilla to water. Pour into dry ingredients and stir.
  4. Let rise for 1-2 hours
  5. Heavily dust countertop with flour, and dived dough into roughly 24 portions. Heat enough oil in dutch oven to be roughly 2 inches deep and around 350F. Fry 6 pieces at a time -- roughly 3 minutes per side -- until golden brown. Transfer to a paper-lined sheet to cool. Dust with powdered sugar (or other toppings, or inject with jam, or...)
  6. Serve and enjoy!
